Salsa Chicken

This is what's in the oven for dinner tonight. The recipe comes from a blog that hosted a crockpotalooza a couple a days ago, some of the recipes look really good. Like this one, this one and this one for sure!

Salsa Chicken

2-4 Chicken breasts
Taco Seasoning
1 cup salsa
1 can cream of mushroom soup
8 oz sour cream

Put chicken in crock pot and top with taco seasoning. Mix salsa and soup and put on top. Cook for 6-8 hours on low and then mix in the sour cream and let it get hot before serving. Serve over rice or in taco shells.

Creamy Corn

Update: I made this on the stove top and put it in the oven for 30 minutes at 350 degrees- super easy and really good!

I love,love,love anything corn. Here's an interesting recipe my mom recommends made in the crock pot! I Can't wait to try it. Enjoy!

20 ounces of frozen corn (get the white/yellow mix kind)
1/2 cup of butter
1 (8 ounce) package of cream cheese
1 1/2 tablespoons sugar

6-8 servings
4 hours cook time - cook on low in crock pot stirring occasionally.

Slow Cooker Taco Meat Loaf

I had every intention of using the slow cooker for this recipe, but the day got away from me and I never had time. The oven variation was just as good. The meat loaf was soooooo satisfying, like a giant hug from the comfort food fairy.

3 eggs, lightly beaten
1 28-oz. fire-roasted crushed tomatoes
3/4 cup crushed tortilla chips
1 medium onion , finely chopped
2 cloves garlic, minced
2 tsp. ground cumin
1 tsp. smoked paprika or chili powder
1 lb ground beef
1 lb. ground pork
1 cup frozen whole kernel corn- I used canned
1/2 cup Monterey jack cheese with jalapeno peppers, shredded
Corn tortillas
1 recipe Smokey Tomato Salsa

Combine eggs, 1/1 crushed tomatoes (reserve remaining tomatoes for Smokey Tomato Salsa), and crushed tortilla chips. Stir in onion, garlic, cumin, paprika, and 1/2 tsp. each salt and black pepper. Add beef, pork and corn; mix well. Shape into a round or oblong loaf to fit slow cooker. Put in foil sling- see direction below.

Cover; cook on low 5 to 6 hours or on high 2 1/2 to 3 hours. Remove from slow cooker and let stand 10 minutes. Serve with corn tortillas and Smokey Tomato Salsa, avocado, green onions, cilantro and lime wedges optional.

Smokey Tomato Salsa-Combine reserved tomatoes; I green pepper, chopped; 1/3 cup chopped green onion; 1/4 cup chopped fresh cilantro; 2 minced, seeded jalapeno peppers; 1 TB. lime juice; and 1/4 tsp. salt

Oven Variation Preheat oven to 350. Bake covered meat loaf for 1 1/4 hours. Uncover sprinkle with cheese, return to oven for 10 minutes. Serve as directed in main recipe.

Foil sling- To place meat loaf in and lift out of slow cooker while keeping it in tact, make a foil sling. Tear off three 18-inch strips of foil folded to double thickness. Crisscross the strips in a spoke-like fashion. Place the loaf in the center of the spokes. Lift he ends of the foils strips to transfer the loaf to the cooker, leaving the foil in place during cooking. Use the foil again to lift the loaf from the cooker to a serving platter. Pull foil strips away and discard.

Crockpot Swiss Steak

I'm trying this tonight. I love crock pot recipes and this looks like a good one. I'll post the results. Enjoy!

2 tablespoons flour
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 to 2 lb. round steak, cut in serving portions
1/2 cup chopped onion
2 tbsp. butter
1 can tomato soup or a can (14.5 ounces) stewed tomatoes
1/2 c. water (if using tomato soup)
1 1/2 tsp. vinegar
Preparation:
Combine flour, salt, and pepper; using a meat tenderizer or rolling pin, pound mixture into steak. Brown steak in butter with chopped onion. Add tomato soup, water, vinegar; transfer to crockpot. Cover and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
Serves 6 to 8.

WW 5 Point Beef Stew

I was never a fan of beef stew until I made this:

Cooking spray
2 tablespoons vegetable oil
2 pounds beef stew meat, cut into 1-inch chunks
1 cup chopped onion
3/4 chopped celery
2 teaspoon salt, divided
1/2 teaspoon pepper
2 garlic cloves, minced
3/4 cup all-purpose flour
2 cups water, divided
4 small onions, quartered
3 carrots peeled and cut into 2-inch pieces
6 small round red potatoes, halved
1 cup dry white wine
1 cup chopped fresh tomato
1 tablespoon chopped fresh parsley
1/4 teaspoon dried thyme
2 bay leaves

1. Coat a large Dutch oven with cooking spray; add oil, and place over medium high heat until hot. Add meat, and cook until browned. Drain and return to pan. Add chopped onion, celery, 1 teaspoon salt, pepper, and garlic; saute until vegetables are tender.

2. Place flour in a small bowl. Gradually add 1 cup water, stirring with a whisk until well blender. Combine flour mixture, meat mixture, onion quarter, carrot pieces, and potato halves in a 4-quart slow cooker.

3. Combine remaining 1 teaspoon salt, remaining 1 cup water, wine and next 4 ingredients; pour over meat mixture. Cover with lid; cook on high-heat setting for 5hours or until meat and vegetable are tender. Discard bay leaves. Yield 12- 1 cup serving.

PS- You'll never know your eating a ww recipe!

Slow Cook Barbecue Chicken

4-6 skinless, boneless chicken breast halves (I used 4 large breast that were partially frozen)
1 (18 oz.) bottle of barbecue sauce
1/2 cup prepared Italian salad dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce

Place chicken in crock pot. I a bowl mix 2/3 of the bottle of barbecue sauce, Italian Salad dressing, brown sugar, and Worcestershire sauce. Pour over chicken. Cover and cook for 3 to 4 hours on high or 6 to 8 hours on low. (I cook on low) Remove chicken from crock pot. Pour juices from crock pot into a large bowl. Shred chicken and place back in crock pot. Add remaining 1/3 of bottle barbecue sauce to chicken an d mix. Then add some of the liquid removed from the crock pot to make the chicken the wetness that you like it. Makes at least 8 sandwiches
